Explicación
There are two uses. (1) It marks the person or thing that a feeling, attitude or action is directed at: speak politely to customers. Before a noun, use Nに対するN. (2) With のに対して after a clause, it contrasts two facts: my older brother likes cooking, whereas my younger brother does not cook at all.

The shop staff always speak politely to customers.
学生の質問 に対して、先生は分かりやすく答えました。
The teacher answered the students' questions clearly.
兄は料理が好きな のに対して、弟は全然しません。

Notas
について marks a topic; に対して marks a target. 先生について話す means talking about the teacher, while 先生に対して話す means speaking to the teacher.
