Explicación
Means "even if one wants to, it is psychologically hard or almost impossible to ~." It is usually used with verbs of perception or feeling, such as 信じがたい, 許しがたい, 理解しがたい, 忘れがたい and 近づきがたい. It is somewhat formal and common in writing. For physical or technical difficulty, use 〜にくい.

あの真面目な彼が会社を急に辞めるなんて、信じがたい話だ。
It's hard to believe that such a serious person would suddenly quit the company.
連絡もしないで約束に一時間も遅れるのは、許しがたい。
Being an hour late for an appointment without even contacting me is hard to forgive.

My first trip abroad became an unforgettable memory.

Notas
It is not used for physical difficulty (✗ このペンは書きがたい → 書きにくい). かねる is about being unable because of one's position or circumstances; がたい is about being unable emotionally.
